Panzanella is a popular salad from central Italy that calls to mind warm Tuscan summers and the scents of surrounding olive groves as you enjoy the delicious flavors of fresh chopped vegetables, toasted artisan bread, and family-made OliAMO olive oil.

INGREDIENTS

  • OliAMO Extra Virgin Olive Oil- 4 oz
  • Cucumbers (your favorite type)
  • 2, cut into ¼”-½” pieces
  • Tomatoes (your favorite type)
  • Amount equal to cucumbers used, cut to ½” sized pieces
  • Fresh basil (can substitute fresh, flat italian parsley)
  • 1 cup, chopped coarsely
  • Juice of a lemon-1
  • Sea salt
  • Freshly ground
  • Black peppercorns
  • Freshly ground
  • Ciabatta
  • Stale or toasted pieces cut to ½” pieces

STEPS: 1Mix together all vegetables, freshly ground sea salt, pepper and herbs with the OliAMO olive oil and lemon juice in a large serving bowl.

STEPS: 2Just before serving, add in the ciabatta pieces.

STEPS: 3Mix until the bread is coated with olive oil and vegetable juices.
